Total Prep Time: 4 hours and 40 minutes
Ingredients:
• 1 pack of unflavored gelatin
• 1 ¾ cups of fat free milk
• 1, 8 ounce pack of low fat cream cheese, soft
• ½ cup of lime juice
• 2 Tbsp. of white sugar
• 2 to 3 drops of green food coloring
• 1 graham cracker pie crust
• Fat free whipped cream, for topping
• Lime peel, shredded and for topping
Directions:
1. In a saucepan, add in the gelatin and ½ cup of fat free milk. Set aside for 5 minutes or until the gelatin is soft. Cook over low heat and cook for 1 minute or until the gelatin dissolves. Remove from heat and set aside.
2. Prepare the filling. In a bowl, add in the soft cream cheese. Beat with a mixer on the lowest setting until smooth in consistency.
3. Add in the lime juice, white sugar and green food coloring. Continue to beat until evenly mixed.
4. Add in the remaining 1 ¼ cups of fat free milk and the gelatin mix. Stir well to mix.
